Team Composition
Each team must consist of one chief cook (Pit Boss) and from 1-4 other team members. A Pit Boss and/or assistant cooks may only cook for their designated team on the contest day.
Approved Devices
The teams may only cook the Competition Meats in the following two devices which will be provided by the Contest Organizer.

Competition Meats
All meat products will be provided by the Contest Organizer and will have been inspected by the Mashgiach (Kosher Supervision) prior to distribution to the teams at the "Team Prep Event" on the preceding Thursday evening. Teams will compete in the four meat categories: Brisket, Chicken (wings or thighs), Chili and Turkey (breasts). (Please note: There may be a change in one of the meat categories.) The Mashgiach will serve as the approved inspector for all food during the times established by the Contest Organizer.
Fees, Food, Furnishings and Fuel - Who Pays For What
The list below summarizes what the Contest Organizer will provide for your team at the Organizer’s expense, and what your team is to provide at your expense.
Competition Organizer Provides:

Competition Meats: brisket, chicken thighs, ground meat for chili and turkey breast

Grill & Smoker: 22 ½” Weber Smokey Mountain and 22 ½” Weber Kettle Grill

Propane burner and large pot for chili

Presentation Materials (for judging): Styrofoam box with piece of aluminum foil (bottom only)

Food Prep Event Items: Pantry ingredients such as seasonings, spices for rubs, sauces, etc. Basic food prep ingredients.

Utensils & Consumables: Basic knives,utensils, tongs, thermometers, etc.

Cooking Space: furnishings and equipment for basic setup including 10 x 10 pop-up tent, 2 tables 1 for team food prep and 1 for serving samples to those who have appropriate “taster tickets”, hot BBQ gloves.
Each Team Provides:

Entry Fee $300.

Food Prep Event Items ingredients such as seasonings, spices for sauces and rubs, etc. that are not provided by the “Pantry.” All items must be approved by the OVH.

Charcoal needed for the competition.

Filled propane tank.

Briquettes and/or lump, wood chunks/chips (for smoking).
Please note: These may not contain artificial flavour additives. If they are flavoured they will have to be approved by the OVH.
Important Dates & Facts
There is a $300 registration fee per team. Teams are limited to 5 people.
Teams may submit additional food prep items, cooking utensils (to be inspected by the OVH) at OTC by August 11 2024.
Meats, rubs, sauces etc. preparation will take place on Thursday August 15 2024.
